Rainbow Trout

All Rainbow trout are cultured with the utmost care to ensure their health and well-being while under our custody. The trout are never treated with antibiotics as they grow under our  care .

All trout are delivered to the receiving shops the same day they are slaughtered and cleaned. When our customers pick them up by 6 p.m. on Saturdays, they are so fresh that they are stiff with rigour mortis.

We provide you with three sizes of trout, head on gills in. The trout are available at the receiving shops each weekend throughout the year:

  • 1 lb trout, within the range of 0.9 to 1.1 lb
  • 2 lb trout, within the range of 1.8 to 2.2 lb
  • 3 b trout within the range of 2.7 to 3.3 lb

     

    Sockeye Salmon

    All Sockeye salmon are cultured with the utmost care to ensure their health and well-being, and are never treated with antibiotics.

    All Sockeye are delivered to the receiving shops the same day they are slaughtered and cleaned. 

    Sockeye salmon are only available at select times from December to February. Upcoming days of delivery will be noted on our website one week in advance.

    We provide you with three sizes of Sockeye (head on, gills in):

    • 2 lb Sockeye: within the range of 1.8 to 2.2 lb
    • 3 lb Sockeye: within the range of 2.7 to 3.3 lb
    • 4 lb Sockeye: within the range of 3.6 to 3.4 lb

    We also provide very specially-raised and prepared Sockeye salmon to be used for Sashimi.

     

    Rainbow Trout Sashimi

    We also provide specially-raised and prepared Rainbow trout for sashimi. This trout is raised using EWOS and Taplow feeds, and artesian spring water

    All Rainbow Trout are delivered to the receiving shops the same day they are slaughtered and cleaned. 

    These fish are then cleaned using the traditional Japanese Ikejime method to drain body fluids from the fish, limit release of hormones (such as cortisol), and greatly reduce the presence of lactic acid in the flesh, all of which degrade flesh. 

    The result is a superior tasting fish suitable for sushi.

     

    Sockeye Salmon Sashimi

    Sushi grade salmon is raised and prepared to the highest of standards (including diet, cleaning, and slaughter methods).

    All Sockeye are delivered to the receiving shops the same day they are slaughtered and cleaned.
